Baked Potato Skins w/MARIO Bacon Bits

Preheat oven to 400 degrees. Bake potatoes for 1 hour. Combine sour cream and chives. When potatoes are cooked, slice length-wise and scoop some potato from skins and save for other use. Brush entire surface of each potato with melted butter and broil for 6-8 mins. Sprinkle cheese and MARIO BACON BITS on each skin. Broil 2 mins. Place one small scoop of sour cream mixture on top of each skin and serve.

Chicken Thighs with MARIO OLIVES

Sprinkle chicken with salt and pepper. In a 12-inch skillet heat oil over medium-high heat. Add chicken and cook 10 minutes; until browned, turning once. Remove chicken, reserving 1 Tbsp. drippings in skillet. Add onion, pepper, and garlic; cook and stir 4-5 minutes, until vegetables are tender. Stir in rice, saffron, MARIO GREEN OLIVES, wine, and 1-1/2 cups water. Boil. Return chicken to skillet. Simmer, covered, 25 minutes or until no pink is left. Garnish with lemon wedges.

Bow-Tie Pasta with Tuna & MARIO Olives

Heat oil in large pot over medium-low heat. Add garlic, onion, tomatoes and MARIO CAPERS; cook over medium heat for 10 minutes or until tomatoes release juces and mixture thickens. Add can of MARIO MEDIUM PITTED BLACK OLIVES and tuna and reduce heat to medium-low for 5 minutes. Toss cooked pasta with olive oil. Add remaining ingredients and toss gently to coat. Serves 4.

Preheat oven to 350 degrees F. Slice bread loaf in half, horizontally, layering olive oil, tapenades, meats, cheeses and tapenades on bottom half of bread, drizzle with olive oil and season to taste with salt and pepper. Replace top half of bread and wrap sandwich in aluminum foil. Bake until muffaletta is warmed throughout and cheese is melted, about 30 minutes.
