Fettuccine Pesto with MARIO OLIVES

Cook fettuccine according to package directions. While pasta cooks, combine MARIO OLIVES, MARIO CAPERS, lemon juice, oil, mustard and garlic and stir in chopped basil and cheese; heat throughly. Drain pasta well and transfer to serving bowl. Spoon pesto over pasta, add tomatoes and mix gently.

Preheat oven to 425 degrees. Grease 13 x 9-inch baking dish. Combine tofu, corn, 1 cup salsa, 3/4 cup cheese, chilies, 1/2 cup MARIO BLACK OLIVES, and 4 Tbsp. cilantro in large bowl. Spoon mixture into each tortilla; roll up tightly. Place into baking dish. Pour enchilada sauce over enchiladas; sprinkle with remaining cheese, cilantro, and MARIO RIPE OLIVES. Bake for 20-22 minutes, until bubbly and cheese is golden brown. Serve with remaining salsa.

Combine vinegar, oil, salt, pepper, and poultry seasoning. Stir until bubbling. Grill on medium heat for 45-60 minutes, turning every 5-10 minutes. Brush sauce over chicken after each turn. Serve with whole or chopped olives on the side.
