Biscotti w/MARIO Black Olives



  • 3/4 Cup All-Purpose Flour

  • 1/4 Cup Yellow Cornmeal

  • 1 tsp. Baking Powder

  • 1/4 tsp. Ground Cumin

  • 3 Tbsp. Butter or Margarine, at room temperature

  • 1/2 Cup Parmesan Cheese, grated

  • 2 Tbsp. Sugar

  • 1 Large Egg

  • 1/2 Cup MARIO BLACK OLIVES, cut in wedges


Combine flour, cornmeal, baking powder and cumin. In large bowl mix butter, cheese, and sugar. Add egg. Add flour mixture to egg mixture and blend thoroughly. Gently mix in MARIO OLIVES. On a lightly floured board, gently shape dough into a long roll. Place roll on greased 10 x 15-inch pan. Flatten roll to make 1-inch thick loaf. Bake at 350 degrees for 20 minutes. Remove and cut loaf crosswise into 3/4-inch slices. Bake cut side down 15-20 minutes longer, until dry and lightly browned
