Chicken Thighs with MARIO OLIVES

  • 12 Chicken Thighs, boneless, skinless

  • 2 Tbsp. Olive Oil

  • 1 Large Onion, chopped

  • 1 Medium Red Sweet Pepper, cut into strips

  • 3 Cloves Garlic, minced

  • 1 Cup Long Grain Rice, uncooked

  • 1/4 tsp. Thread Saffron, crushed, or 1/8 tsp. Ground Saffron

  • 1/2 Cup MARIO PIMIENTO-STUFFED GREEN OLIVES

  • 1/2 Cup Dry White Wine, Dry Vermouth, or Chicken Broth

  • Lemon Wedges

Directions

Sprinkle chicken with salt and pepper. In a 12-inch skillet heat oil over medium-high heat. Add chicken and cook 10 minutes; until browned, turning once. Remove chicken, reserving 1 Tbsp. drippings in skillet. Add onion, pepper, and garlic; cook and stir 4-5 minutes, until vegetables are tender. Stir in rice, saffron, MARIO GREEN OLIVES, wine, and 1-1/2 cups water. Boil. Return chicken to skillet. Simmer, covered, 25 minutes or until no pink is left. Garnish with lemon wedges.
