Bacon Stuffed Mushrooms



  • 1 lb. medium fresh mushrooms

  • 1/4 cup Mario Extra Virgin Olive Oil

  • 1 cup Mario Real Bacon Bits

  • 1/2 cup onion, minced

  • 2 Tbsp. green pepper, minced

  • 1/2 cup fine dry bread crumbs, plain

  • 1 tsp salt

  • 1/8 tsp pepper

  • 1 cup whole kernel corn, drained

  • 1/4 cup hot water


Preheat oven to 325 degrees F. Clean mushrooms, remove and chop stems, set aside. In heavy skillet, drizzle olive oil in bottom of pan adding onion, green pepper, chopped mushroom stems, cooking until tender. Add salt and pepper and bacon bits to mixture. Add corn and bread crumbs adding a little water at a time to moisten, but not making it runny. Press mixture into button caps, mounding a bit. Place in a lightly greased 13 x 9 - inch baking dish and bake uncovered for 20 minutes.
