Potato Salad with MARIO GREEN OLIVES
- 1 Lb. Potatoes, peeled, cubed
- 2 Chicken Bouillon Cubes
- 1 Onion, chopped
- 1 Green Pepper, chopped
- 1/2 Cup Olive Oil
- 1/4 Cup Red Wine Vinegar
- 2 Cloves Garlic, chopped
- 2 tsp. Lemon Juice
- 1 Can (8 1/2 oz.) Sweet Green Peas, drained
- 1 Jar (4 oz.) MARIO SLICED PIMIENTOS
- 2 Tbsp. MARIO SLICED GREEN OLIVES
- 1 Tbsp. Diced Jalapenos
Place potatoes and bouillon in large saucepan. Cover with water; bring to boil. Cook over medium-high heat for 20 minutes or until tender; drain.
Combine onion, bell pepper, olive oil, vinegar, garlic and lemon juice in small bowl; pour over potatoes. Gently stir in peas, MARIO PIMIENTOS, MARIO SLICED GREEN OLIVES, and jalapenos. Season with salt and pepper; stir gently. Refrigerate until ready to serve.
