Ingredients
- 1 Ib of chicken thighs
- 1/4 cup of green olives (or more to your liking)
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 tsp dried thyme
- 1 tsp dried basil
- 2 Lemons cut in wedges
- 1/4 cup of olive oil
- Salt & Pepper to taste
Preparing the spices
Prep Chicken
Preheat oven to 425 degrees. Prep chicken thighs by adding 1/4 cup of olive oil, salt and pepper, and herb blend. Toss them around to get them fully coated. Add lemon wedges and olives, drizzle with olive oil and place on baking sheet.
Bake & Serve
Add chicken to preheated oven for 20-22 minutes. Let rest for 5 minutes.
Serve with your choice of side and enjoy!
