Mediterranean Orzo Salad
Orzo pasta boasts TWICE the protein of brown rice and is a good source of thiamin and
niacin as well as some B6, folate, iron and zinc. It’s also a glucose bearing carbohydrate
that creates serotonin, the “happiness neurotransmitter,”. Bring on the HAPPY salad!

Ingredients
- Cooked orzo pasta
- 1 English cucumber sliced and quartered
- 1 pint cherry tomatoes halved
- 1.15 oz. can garbanzo beans drained and rinsed
- 1/2 cup pitted Mario Foods Kalamata olives halved
- 1/2 cup feta
Dressing
- 1/3 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 tsp fresh parsley
- 1 teaspoon sugar
- 1 teaspoon Dijon mustard
- 1/2 tsp garlic powder
- 1/4 teaspoon pepper

Add all of the salad ingredients to the orzo followed by the dressing.
Toss to coat.
