Ingredients
- 2-3 TSP orange zest
- 2 TBSP Red wine vinegar
- 2 TSP Honey
- 1/3 Cup EVOO
- 1 TBSP Sweet Orange Fruit spread
- 1 TBSP Dijon Mustard
- Kosher salt + black pepper, to taste
- 2 TBSP Shallots (minced)
- 1 qt strawberries
- 12 oz Baby lettuce
- 4 oz crumbled feta cheese
- 1/2 cup smoked slivered almonds
Preparing the spices
Make Dressing
In a small bowl, whisk together vinegar, orange zest, orange juice, honey, mustard, olive oil, shallot, salt, and pepper until fully
emulsified. Store refrigerated in an airtight container tor up to 1 week.
Note: You can also add the ingredients to small jar with a tight fitting lid and shake until emulsitied.
Mix With Salad
Put the lettuce in a large bowl. Add the strawberries, feta and almonds. Drizzle the dressing over the salad, and toss well.
Enjoy!
Serve immediately and enjoy with grilled chicken or a bright, berry-scented rosé that echoes the strawberries in this summer salad.
